classic salad with cucumbers and tomatoes
Ingredients
1 organic cucumber
2 large beef tomatoes (my favorites: Buffalo Steak, Ozark Sunrise, Ananas Noir)
1 red onion
¾ teaspoon cumin seeds
2-3 tablespoons lime or lemon juice
Salt
Black pepper (my tip: Indian mountain pepper )
2 tablespoons chopped coriander (if you like)
Wash the cucumber with the skin on and cut it lengthways into quarters and into small pieces. If the cucumber is already very watery, scrape out part of the inside. Wash the tomatoes, halve them and cut out the stems, then dice the tomatoes. Peel the onion and cut into small cubes.
Roast the cumin seeds in a pan without fat until they crackle slightly and smell nice. Remove from the heat and allow to cool. Mix the citrus juice with salt, pepper and cumin seeds and mix with the vegetables. If possible, let the chachumber steep for another hour, then sprinkle with coriander leaves (optional) and serve.
