    What are green peppercorns?

    Both green and black pepper come from the same plant. This tropical flowering vine produces small berries called peppercorns. The difference between green and black peppercorns is when they are harvested and how they are processed.

    The youngest peppercorns are green. They retain this color if they are harvested early. Green pepper tastes milder than black pepper. Fresher and fruitier with less heat. Unlike black pepper, which develops heat the moment it hits your tongue, green pepper builds slowly. It takes 5-10 seconds before you really feel it.

    Due to this property, meat, fish, sauces and dishes become more complex if you do not want to drown out the typical taste from the beginning. Green peppercorns start with a herbal taste that translates into a strong but tolerable spiciness.
