Pepper from Indonesia
Pepper from Indonesia comes in many different forms. White pepper comes from the Indonesian island of Bangka, not far from Sumatra, and is named after its export port. Muntok Blanc contains only about 1% essential oils, has less aroma and a purer spiciness than black pepper and is therefore particularly recommended for fish, poultry and light sauces due to its restraint.
Another pepper from Indonesia is long pepper. It comes from the island of Sumatra and has a pleasantly mild spiciness and a warm and spicy taste. It has an exceptionally fine chocolate note. Unlike black pepper, long pepper is both hot and sweet. Similar to a mixture of white pepper, nutmeg or cardamom, it gives the dish a special note. You can use long pepper instead of or in addition to black pepper. Long pepper is much hotter than black and white pepper.
