Kampot pepper sauce - a classic

Ingredients for the Kampot pepper sauce

For four grilled fish
juice of 3 limes
1 - 2 tablespoons palm sugar
4 tablespoons fish sauce
4 tablespoons black peppercorns, e.g. Kampot Noir

For the sauce, roughly chop the pepper. Mix all ingredients together. Done.

This simple, quick sauce goes well with any grilled fish and meat or as a marinade for raw fish.
