Ingredients
600 g salmon fillet, without skin and bones6 oranges
2 shallots
2 tablespoons honey
2 tablespoons butter
1 pinch of cardamom, ground
Green pepper, e.g. Thekkady Vert
olive oil

Cut the salmon fillet into thick slices and sprinkle with salt. Peel and fillet the oranges, collecting the juice. Peel the onions and cut into thin slices.
Heat the honey in a pan over medium heat and allow it to caramelize slightly. Stir in the butter and orange juice and season with salt, cardamom and coarsely ground green pepper. Fry the orange fillets and onion slices in it and set aside.
Place the salmon, onions and orange fillets alternately in a fan shape in a baking dish and drizzle with the honey sauce from the pan and sprinkle again with some coarsely ground green pepper if you like.
Place the dish in the preheated oven at 180°C for about 20-25 minutes until the salmon is cooked.
A great side dish would be mashed potatoes with green pepper. This would pick up the peppery notes in the main dish while adding a creamy, warm component that is ideal for a winter dish.
