Spicy and fruity red cabbage salad is a popular side dish in German cuisine. Many people enjoy the contrast between the spiciness of the red cabbage and the sweetness of the fruit in this salad. It is a refreshing and flavorful side dish to many dishes.
Ingredients
125 g macadamia nuts
10 g butter
2 tablespoons sugar
1/2 teaspoon salt
1/2 tsp Kampot Rouge , coarsely crushed
7 tender leaves of a savoy cabbage, cut into fine strips
1/2 red cabbage, cut into fine strips
1 ripe mango, cut into thin strips
1 ripe papaya, cut into thin strips
15 g mint, leaves picked and roughly chopped
dressing
100 ml lime juice
1 stalk of lemongrass, cut into small pieces
3 tablespoons maple syrup
2 teaspoons sesame oil
1 teaspoon soy sauce
4 tablespoons of mild olive oil

For the dressing, put all the ingredients except the olive oil in a small saucepan and simmer at a high temperature for about 5-10 minutes until syrupy. Remove from the heat and allow to cool. But before it gets too cold, pour through a sieve into a small bowl and stir in the olive oil. Have the dressing ready.
The next step is to caramelize the macadamia nuts. To do this, put the nuts in a pan and roast them, initially without adding any fat, until they have taken on some color. Then add butter. When it has melted, add sugar, salt and pepper. Stir constantly during the caramelization so that nothing burns and the nuts are coated with the ingredients on all sides. When brown, leave to cool on baking paper. Later, chop roughly for the salad.
Put the remaining ingredients in a bowl, add the caramelized nuts, pour the dressing over them and mix everything well.
