Tomatentartar auf Ziegenkäse mit Lampong Pfeffer - Pure Pepper

Tomato tartar on goat cheese with Lampong pepper

Ingredients for 4 people

20 half medium-sized dried tomatoes (soak in olive oil 1 day before) + 2 fresh whole tomatoes
3 stalks of spring onions
1 tablespoon capers
3 gherkins
1 bunch of chives
olive oil
Some lime juice
300 g goat's cheese
Lampong pepper

preparation

Cut the drained and slightly pressed tomatoes into very small cubes. Also cut the spring onions into very fine small cubes.
In the next step, finely dice the gherkins, chop the capers and put both in a large bowl. Add the previously chopped tomatoes and spring onions as well. Grate the two fresh tomatoes using a coarse grater.
Cut the chives into very fine rolls and add about half of them. Season with the Lampong pepper, add lime juice and a little olive oil.
Arrange the tomato tartar in a ring in the middle of four plates. Cut dumplings out of the goat cheese and arrange three dumplings around each. Garnish with the remaining chives and pink pepper (if you have them on hand).
