Ingredients
16 figs
A few sprigs of thyme
red wine
1 tablespoon honey
Per person:
2 tablespoons goat cheese
1 to 2 berries of Tasmanian pepper , ground or finely chopped
To taste 1 teaspoon fine oil (e.g. macadamia nut oil – to stay in Australia)

Put the figs and thyme in a saucepan and cover with red wine. Simmer over a medium heat until the red wine has almost completely reduced. Stir two or three times. Finally, stir a tablespoon of honey into the warm red wine syrup and leave to cool.
If kept well sealed, the figs will keep in the refrigerator for several weeks.
Mix the goat's cheese with the Tasmanian pepper berries and the oil and leave to stand for a while so that the color can develop properly. Form dumplings, arrange on plates with the figs and serve.
