Baked Tomatoes with Anchovies

Ingredients

4 large ripe sweet tomatoes
4 small anchovy fillets
1 cucumber
tarragon or basil or chervil
a few parsley leaves
sourdough or ciabatta bread
olive oil
White pepper (recommendation Penja Blanc )

Preparation of baked tomatoes

First, halve the tomatoes and place them on a baking tray, drizzle with a little olive oil and season with white pepper. Place an anchovy fillet on top of each one.

Then cook under the oven grill until hot and lightly browned. Peel the cucumber and cut it in half lengthways; scrape out the seeds, then cut the cucumber into cubes.

Now for the dressing, pour about 5 tablespoons of olive oil into a blender, add all the green herbs and puree into a nice mixture.

Finally, grill the ciabatta. Now spoon the dressing over the tomatoes, cucumber and toasted bread. And enjoy.
