Ingredients
500 G plums
100 g blueberries
1 mountain peach (not required)
4 shallots
4 fresh garlic cloves
3 chili peppers
6 – 8 peeled cocoa beans
4 – 5 sticks of lampong pepper
1 teaspoon vanilla syrup (optional)
preparation
To make the spicy plum chutney, first pit and halve the plums and mountain peaches. Then peel the shallots and garlic, roughly chop the chili peppers and peel the cocoa beans.
In the next step, chop the shallots, garlic, chili and cocoa beans in a food chopper. If you don't have one, you can chop all the ingredients very finely with a sharp knife. The important thing is that all the ingredients are very finely chopped.
Then heat the pan with a little oil and fry all the chopped ingredients for about 5 minutes. Add the plums, blueberries and mountain peach and simmer on a low heat.
Finally, grind the Lampong pepper and add it promptly, seasoning with the vanilla syrup. The fruit slowly disintegrates and combines wonderfully with the spices. Simmer for another 15 minutes. Then pour into clean jars, turn over and leave to cool.
