The hot and sweet chocolate pepper cookies are an interesting taste experience that is both sweet and spicy. The cookies consist of a chocolate base that is refined with a pinch of hot pepper, resulting in an unusual but delicious taste. The sweet taste of the chocolate is balanced by the hot note of the pepper, giving the cookies a unique flavor.
Ingredients for about 35 cookies
250 g flour
60 g sugar
1 egg
125 g salted butter
1 tablespoon cocoa powder (70% cocoa)
45 g powdered sugar
200 g marzipan paste
20 g each of Kampot Rouge and Kampot Noir
150 g chocolate coating
1 tablespoon butter

For hot-sweet chocolate pepper cookies, first knead flour, sugar, egg and butter flakes into a smooth dough. Chill in cling film for about an hour, while preheating the oven to 180 ºC. Dust the work surface with flour, roll out the dough to a thickness of about three millimeters and cut out small squares (side length about 3.5 cm). Line a baking tray with baking paper, arrange the cookies on it and bake in the oven for about ten to twelve minutes.
For the filling, sift the cocoa and icing sugar and knead together with the marzipan and ⅔ of the finely ground pepper to a smooth mass and form into a roll. Wrap in cling film and chill for approx. 20 minutes. Cut the marzipan roll into approx. 35 slices. Place each slice on a cooled biscuit, place a second biscuit on top and press down lightly.
To decorate, melt the chocolate with a tablespoon of butter over a hot water bath and stir well. Then dip the biscuits in it, sprinkle the wet chocolate with coarse pepper and leave to dry.
