Citrus salad with black pepper is a refreshing and tasty combination of sweet citrus fruits and the spicy note of black pepper.
For 4 – 6 people, 25 minutes preparation time
Ingredients
3 grapefruit (Ruby Red), peeled
2 blood oranges, peeled
3 oranges (Valencial or Naval), peeled
1 lemon, peeled
1 lime, peeled
Salt
Black pepper from the mill ( Kampot Noir or Indian mountain pepper )
Making Citrus Salad
To peel fruit, use a very sharp knife. First, cut the ends of the fruit flat, removing the peel until the fruit is “naked”. Then remove the skin, inside and out, and also any remaining white spots.
Cut the grapefruit into round pieces, about 2 cm thick, across the equatorial line, not the poles if the fruit were a globe. Spread them out on a glass plate, without overlapping. Cut the oranges (both types) into round pieces as well, but thinner than the grapefruit. Place a slice of orange on each grapefruit slice, alternating them - for a nice visual effect.
Cut the lemon and lime into slices as thinly as possible without them falling apart. Place the slices on the oranges as desired. Season with salt and plenty of pepper and then leave to stand for 30 minutes. Then serve the citrus salad.
