What is white pepper?
Contrary to the widespread belief that white pepper is a step between green and red pepper, it is peeled red pepper. White pepper is only harvested when it is fully ripe. This means that the shell is a strong red colour when harvested. In the traditional method, the peppercorns are packed in linen sacks or barrels and then soaked for a long time in standing or, better yet, running water. This loosens the shell and the pulp and allows the two to be easily separated from each other. This is done mechanically, often by rubbing or treading the fruit. The result is white peppercorns, which, depending on the growing area, can have shades ranging from creamy white to greyish white. The grains are then dried for a long time and intensively in the sun.
What is the difference between white and black pepper?
White pepper is just the pepper kernel. Without the pepper shell with its essential oils, the pepper kernel alone is responsible for the spiciness - the piperine. It is therefore very important that the pepper is harvested when fully ripe, as this is the only time when the piperine is fully developed. This is also one reason why white pepper is hotter than black pepper.
What is white pepper good for?
White pepper impresses with its beautiful, intense, clear spiciness. Depending on the growing area, there are also aromas of barnyard and eucalyptus, but also floral or smoky aromas. Pure Pepper offers white pepper from Sri Lanka, Cameroon, Indonesia and Cambodia. The pepper from Cameroon grows on rich, mineral volcanic soil. This gives it an intense, complex character that combines the exoticism of the tropical sun and the smokiness of the volcanic soil.
The white peppercorns from Cambodia are different, with a mild, rounded spiciness with notes of cedar and flowers. They have a slightly spicy taste. Last but not least, there is a pepper from Indonesia that has wonderful, large, creamy white peppercorns. It has an aroma of barnyard and eucalyptus. It is important to note that the scent of the whole peppercorn is very different from the ground peppercorn.
When do you use white pepper?
